There should be a help menu for the windows version of Fractint.... The DOS version has a set of instructions, but you can vary the fractal formula on both and you can alter basics like the pallette, the number of iterations and so on. I think you can also get into the pallete to change a specific range of colours at 256 colours - that's how I recoloured Amber and Tamsin.
